Okay – WOW! I bought a bunch of hard-boiled eggs for some reason from Costco (some things aren’t meant to be purchased in bulk when no one else in your house eats them)! I didn’t want them to go bad so I went out to see if I could find an egg salad recipe without mayo (one of my least favorite condiments). I lucked upon this recipe and I tasted it and the angels sang from heaven above! I’m currently loving it with a slice of Dave’s Killer Bread!
